A digital thermometer gives you an answer that color, cooking time, and touch alone cannot: the internal temperature at the exact spot that matters. Used well, it supports safer food, better texture, and less wasted meat.

Start With the Right Type of Thermometer

For most home cooks, an instant-read digital thermometer is the most useful option. You insert the probe near the end of cooking, wait a few seconds for the display to settle, and remove it. It works for chicken, burgers, pork chops, fish, casseroles, sauces, baked goods, and even frying oil.

A leave-in probe thermometer is helpful for larger cuts such as turkey, brisket, pork shoulder, or a whole roast.
